Breakfast is a hearty Organic Yam and Dill Frittata accented with sweet Vidalia onions carmelized in extra virgin olive oil. Served with fresh strawberries and cantaloupe, the subtle flavors make for a great start to the day. The yams are a good source of slow-burning complex carbohydrates for energy, while the berries provide disease-preventing antioxidants and the melons hydrate the skin. Organic eggs from cage-free hens raised without hormones provide excellent protein.

Our signature homemade Fitness Kitchen Muffins are a delicious pick-me-up morning snack. Made with flax seeds, organic protein, fresh berries and nuts, Fitness Kitchen muffins contain no wheat or refined sugars. While they may be health food, all you have to remember about these moist, crumbly treats is that they’re delicious. But watch outFitness Kitchen clients report that family members and coworkers tend to steal these when nobody’s looking!

For lunch, try our gourmet Organic Grilled Chicken Salad with Papayas and Blueberries. Cool and creamy, this summer salad is deceptively rich. The chicken is from a local free-range farm and raised without cruelty. Our light mayonnaise is made with healthy Omega-3 rich oils and fresh lemon juice. The papaya aids in digestion and the blueberries, one of the world’s healthiest foods, provide color and texture along with vitamin C and anthocyanidins to fight cancer and free radicals.

Beat the afternoon blues with a colorful Spinach Salad Stack with Crispy Saffron Galettes. Fitness Kitchen Chicken Soft Tacos make for a hearty dinner. Tender chunks of grilled free-range chicken mix with soy cheddar cheese, wild field greens and red pepper. The tacos are wrapped in flaky, skillet toasted spelt tortillas, garnished with mild tomatillo salsa and fresh cilantro, and topped with raw, organic sour cream from a small local dairy. The cream tastes heavenly and contains a wide spectrum of natural enzymes and probiotics lost in the commercial Pasteurizing process.

A simple, elegant finger snack of Turkey Breast with Kiwi and Pepitas winds down the day. Our smoked organic turkey is packed with high-quality protein and the naturally occurring essential amino acid L-tryptophan that may help provide a good night’s sleep. The slow burning fruit sustains blood sugar levels during the night, and the lightly toasted nuts balance the snack nutritionally and are rich in beneficial fats to aid in cholesterol management.
